The Perfect Homemade Teacher's Gift

For the teachers on your gift-giving list, consider making something useful and delicious to say thank you for their dedication to your child’s classroom this past fall. Simple jars of nutty granola and scented vanilla sugar can be packaged as is, or with a new coffee mug and/or a gift card to their favourite coffee shop. This easy, edible gift is certain to brighten up any Christmas vacation morning.
 
 
Vanilla Sugar
Ingredients
½ cup sugar
1 vanilla bean

Directions
1. Slice the vanilla bean in half lengthwise. Cut each piece into three sections and place all of them in a small glass jar.
2. Cover with the sugar and affix a tight fitting lid.  Shake the sugar once a day for a week.
 
Four-Nut Granola
Ingredients
5 cups oats
1/2 cup of each of the following: almonds, pecans, walnuts, and pistachios
1/4 cup canola oil
1/2 - 3/4 cup honey
2 tsp vanilla

Directions
1. Pre-heat oven to 350 degrees. Combine all of the ingredients in a large mixing bowl.
2. Spread the mixture on an oiled half-sheet pan and bake for 30 minutes, stirring every 10.
3. After thirty minutes turn off the heat and allow the granola to cool and crisp in the oven.
4. Remove and store in an airtight container for 1 week or the fridge indefinitely.
 
Tip: Use pretty jars (like Weck) so they can be re-used after the goods are gone.
