German Chocolate Cake Cookies

Yield 24 servings

1 canister rich chocolate frosting
1/2 cup shredded sweetened coconut flakes, plus extra for garnish
1/3 cup chopped pecans
48 chocolate wafer cookies

1. In a bowl, mix the frosting, pecans and coconut flakes together

2. On a clean surface, lay out half the wafer cookies

3. Place about 2 teaspoons of the chocolate mixture on the cookies and top with the remaining half of the cookies

4. Squeeze slightly to form a sandwich

5. Dollop the top with an additional teaspoon of the frosting and sprinkle with a pinch of coconut flakes

6. Can be made up to 3 days in advance and stored in an airtight container.
