Divine Brown: "Cooking is Relaxing" & Her Fave (Healthy) Comfort Food!

One of the things that makes life easy in the kitchen for me is knowing that – most of the time – I am only cooking for two. It's never a chore because I really enjoy do it!
Preparing a meal for mini me and I is relaxing; doing my makeup (or having it done for me) runs a close second. And it brings me great joy knowing that my daughter actually looks forward to my home-cooked meals :)
This time of year is the time when I really like to dig in when it comes to coming up with great dishes for two. It can be challenging to concoct different spins on my trademark dishes, and incredibly easy to fall into the same old routine. But the fall brings out the desire to cook comfort food in all of us! And with seasonal food like squash, root veggies, apples and pears it's easy to come up with great recipes for comfort-style yet health-conscious meals.
Here is one of my favourite recipes for my Spicy Pureed Butternut Squash Soup:
2 tablespoons butter/coconut oil
1/2 Spanish onion, chopped
1/4 cup of fresh ginger, peeled and chopped
4 to 5 garlic cloves, chopped
1 medium butternut squash
1/2 scotch bonnet pepper, chopped
1/4 teaspoon cayenne pepper
Light sour cream (optional)
1/4 teaspoon all spice/nutmeg
2 table spoons brown sugar
4 cups chicken broth
1. Melt butter or coconut oil in pot, and lightly brown onions. Slowly add garlic, ginger and scotch bonnet until fragrant.
2. Bring squash to a medium boil in the chicken broth; simmer until semi-soft, then add onions, ginger, garlic and scotch bonnet. Add brown sugar and remaining spices for 7-10 minutes at low boil until squash is soft. Proceed to blend until smooth texture is achieved.
3. Add light sour cream if desired when ready to serve. Enjoy!
